But I&#8217;m a Mexican Foodie. I love anything south of the border! <\/p>\n<table align=\"center\" cellpadding=\"0\" cellspacing=\"0\" style=\"margin-left: auto; margin-right: auto; text-align: center;\">\n<tbody>\n<tr>\n<td style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" border=\"0\" height=\"266\" src=\"http:\/\/2.bp.blogspot.com\/-G2-K8tqkr1Y\/Tt65U3C1DDI\/AAAAAAAAGL0\/-sOkMWxZTZw\/s400\/enchiladas+036.JPG\" style=\"margin-left: auto; margin-right: auto;\" width=\"400\" \/><\/td>\n<\/tr>\n<tr>\n<td style=\"text-align: center;\">Green Chile Chicken Enchiladas &#8211; you can use the small flour tortillas to make them for a crowd! <\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<h4><span style=\"font-family: Verdana,sans-serif;\"><span style=\"font-size: large;\"><i><b><span style=\"color: red;\">GREEN CHILE CHICKEN ENCHILADAS&nbsp;<\/span><\/b><\/i><\/span><\/span> <\/h4>\n<p>2 1\/3 cups chicken shredded<br \/>1\/2 large onion diced<br \/>1 can Cream of Chicken Soup<br \/>1\/2 packet of Taco seasoning<br \/>3\/4 cup fine chopped salsa<br \/>1 can Niblets corn drained (optional)<br \/>1 small can diced green chiles <br \/>a few shakes of Johnny&#8217;s Season Salt<br \/>a few shakes of cumin<br \/>&nbsp;3\/4 cup sour cream (add last half hour)<br \/>1\/3 cup milk or cream&nbsp; <br \/>shredded jack or cheddar cheese (I like Jack Cheese best for these) <\/p>\n<table align=\"center\" cellpadding=\"0\" cellspacing=\"0\" style=\"margin-left: auto; margin-right: auto; text-align: center;\">\n<tbody>\n<tr>\n<td style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" border=\"0\" height=\"266\" src=\"http:\/\/3.bp.blogspot.com\/-OFrOdNDUzW0\/Tt60T8id6mI\/AAAAAAAAGIs\/_XlRCDdAD0w\/s400\/enchiladas+016.JPG\" style=\"margin-left: auto; margin-right: auto;\" width=\"400\" \/><\/td>\n<\/tr>\n<tr>\n<td style=\"text-align: center;\">My Ingredients List for Green Chile Chicken Enchiladas&#8230;.super easy! Add Niblets corn if you need to feed even more people! <\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>Cook chicken and shred it up. Then add the 3\/4 cup sour cream, chiles, salsa and spices. Add milk or cream and the soup to&nbsp; the filling.&nbsp; Add sauteed onions and taco seasoning packet (1\/2 pkg.)<\/p>\n<table align=\"center\" cellpadding=\"0\" cellspacing=\"0\" style=\"margin-left: auto; margin-right: auto; text-align: center;\">\n<tbody>\n<tr>\n<td style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" border=\"0\" height=\"266\" src=\"http:\/\/3.bp.blogspot.com\/-RYjeJ11MCB8\/Tt60xsLyf1I\/AAAAAAAAGJo\/MxbfQTspGR8\/s400\/enchiladas+029.JPG\" style=\"margin-left: auto; margin-right: auto;\" width=\"400\" \/><\/td>\n<\/tr>\n<tr>\n<td style=\"text-align: center;\">Roll up the Enchilada filling topped with a bit of shredded cheese. <\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>Taste and season if needed.&nbsp; Spoon the filling into 8 to 10 flour tortillas. Add some grated jack cheese and then roll them up. Top with cheddar cheese. Bake 30 minutes at 350 covered with foil. When ready to serve, top with a slice of avocado, if desired. Just use the smaller flour tortillas to make double the recipe if you are serving lots of other foods. They will make mini enchiladas!
