Crockpot Chicken Tacos

These tacos only have 4 easy ingredients, and they are easy to make in the crock pot, or in the oven in only a few hours. Dump everything in and let them simmer all afternoon. Then fry up some tortillas, and dinner is served!

Crockpot Chicken Tacos….easy and very yummy! 

I have always loved Tacos. Even as a very picky child, I would always eat my mom’s homemade tacos. But it wasn’t until I was married that I really got a few good recipes from friends for a good taco filling. 

Sherry was my favorite newlywed friend. We both had only 2 kids and we hung out as stay-at-home moms together, going to the park or shopping at the mall. She has since moved to Northern California and I to Utah, but once upon a time we were very good buds. 

She used to invite us over for dinner and she was an excellent, gourmet cook. She taught me to put a packet of taco seasoning in with a small jar of green chili salsa to my ground beef. It was so easy but soooo good! 

This is the way I like my Crockpot Chicken Tacos…..with corn tortillas and cilantro along with traditional toppings.
Well, now I’ve tried lots of other taco recipes, and this chicken taco recipe is super duper easy and yummy…my kind of cooking.  Here is the recipe…..I hope you like it too! 
 Chicken Tacos using flour tortillas and some avocado, sour cream and peppers for toppings….. My hub’s favorite. 

 Crockpot Chicken Tacos Ingredients 

1 envelope of Taco Seasoning
5 to 6 pieces Boneless, Skinless Chicken Breasts
1 16-ounce jar Salsa 

1 small can green chiles (diced up)

Directions: 
Dump everything into a crock pot no water needed. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork. It is even better as leftovers the next day. Sometimes when I don’t have all day I just put it in an oven baking dish on 350 for 3 hours in the oven and it’s pretty ready to shred by then. 

Use your favorite taco seasoning packet and salsa brand for these.  I just used generic salsa and it was wonderful. I have heard that Paul Newman’s Own salsa is great for these tacos too. Maybe Mango Salsa if you want to try
a sweeter taco mix? 

The main ingredients for Chicken Tacos in a crockpot are 4 simple ones; chicken, salsa, a taco seasoning packet and green chiles. That’s pretty much it! Dump them all in a crockpot and wait for the magic!! 
I try to find the diced green chiles in the can, but these were on sale for 50 cents, so who minds chopping a
little to save a lot. These can cost up to $2.00 a can! What a savings I scored! 
2 seconds to chop them up. It’s kind of fun anyway. I feel like a real chef with my chef’s knife!

Top it with lettuce, cilantro, tomato, avocado, sour cream and cheese. They are delicious, messy and yummy.

The hubs likes flour tortillas and lots of avocado so here is his taco. It’s pretty massive I’d say. He likes them that way. Nice and sloppy. Messy eating means good eating, I always say!

Hearty Ham and Bean Soup

Hearthy Ham and Navy Bean Soup is a great way to use up your leftover holiday ham!

Here I am after all my hard work picking, and choosing and then wrapping dozens of gifts for my kids, their spouses, and my grandkiddos. Right before the chaos began I wanted to take a picture. After all….you know it’s a rush after all the hard work. I’m with 2 sweet little girls all excited to see what is inside each box! They were so cute trying to read names and pass out all the presents to everybody.  


We had a great time on Christmas ripping open the presents and playing with the grandkids and watching their sweet faces when they loved something they got. That’s the best part of Christmas isn’t it? 

Now you might not think this face is so sweet, but when he likes something….it shows on his face…..my son Jeffrey, the hunter. 


Now this is definitely one of the sweetest faces of the day. AND the cutest picture I snapped all day. She wouldn’t take her fairy wings or skirt off even to eat. And I think she loved her Barbie Big Wheels. 


Recipe for Hearty Ham and Bean Soup

INGREDIENTS 
1 medium onion diced and sauteed in 2 tablespoons of butter
2 Tablespoons of flour
1 cup diced celery (2 to 3 stalks)
1 cup sliced carrots (3 carrots or 15 mini carrots sliced)
2 cups of diced ham (or boil ham bone and cut and dice leftover ham)
2 cups water
1 – 1 1/2 cups milk (depending on how thick you like your soup)
1 can great Northern beans 
1 can lima or butter beans 
1/3 cup of sour cream 
1/2 teaspoon lemon pepper
salt and pepper to taste
a sprinkle of parsley flakes on top


DIRECTIONS 
Saute the chopped sweet onion in 2 Tablespoons of butter with a little squirt of oil till they are caramelized. Then add the 2 Tablespoons of flour and let that cook for a minute. Then add 1/2 cup milk and make a white cream. Then add the water and the veggies and the chopped ham. (If you boiled your ham bone for a few hours beforehand then just use the water from that and cut off 2 cups of ham meat into diced pieces. Let the veggies cook for about 15 minutes. Then add the beans. You can just add 1 can if you are not a bean fan. Then add the rest of the milk and sour cream and seasonings. Simmer on low for another 5 minutes. Add salt and pepper to taste. I will sometimes add some parsley too just for looks at the end. 

Pretty brunch table set up. I got the linens from Kohls and the China from Shopko. I love the runner I found recently to match and the cute little tea lights. My mom got me these little blue egg nog glasses many years ago as a birthday gift. She always made a big deal of family holiday dinners too. I am so glad she did.  

I have been collecting Snowmen china  and table linens for a few years now and have a complete set of cute stuff.  It’s fun to get it out once or twice a year during the December/January months and have everybody over for dinner. 

Here is the cute snowman kiddie table for my 3 granddaughters to eat at. I have 2 cute sets of plates from Target and Shopko.  It is funny how when they are too little to sit at it they want to, and when they are old enough to sit here, they’d rather sit at the big people table. Why is that?

John’s dad playing Santa in his mid eighties was so super sweet. We love him.

Anyway, now that Christmas is all over and it’s almost time for New Year’s Day, I am looking for a few more recipes I love to make as comfort foods. Soups are so great when it is cold and snowy. This is one of my very favorites. Everybody will love it, so try it!  And Happy New Year from my family to yours!!

Christmas Desserts

We just had our annual family Christmas Party with my hub’s side of the family. There were lots of fun desserts for the dessert bar. Here are just a few of them.

My Chocolate Bundt CAKE is really yummy with cream cheese icing. I did it a little differently than last years below. I added some of those decadent chocolate balls to the top and just some red and white sugars.

There were lots of traditional sugar cookies on cute platters and plates….
Some were really fancy with golden doilies underneath! 
Fruit desserts like this Berry-peach crisp (HERE) are always easy and popular for Christmas desserts….Dutch Apple crisp with a little cranberry would be a great holiday dessert too…….. just because of the colors…..
Gotta love a reindeer cupcake. Check out some cute ones HERE  including a gingerbread cake with yummy cream cheese icing. These are so cute and easy too! Doing these along with some white cupcakes decorated with red and green candies and a few light green with cupcake paper toppers would be a really pretty Christmas Dessert display. Your centerpiece could be a few tin or wooden reindeer. 
Another party I went to had a CANDY BAR with glass jars LOADED with candy! It was a blast for the kids to
do their own thing and fill their own ziplock baggie with fun stuff. 

And it looks so pretty on the table doesn’t it? They used lots of red and green candies…..

Of course having a cute table centerpiece makes everything look so darling too! 
I know somebody who would LOVE a candy bar at the NEXT Christmas Party! 
Sweet appetizers are always good. This is a powdered sugar and cream cheese Peppermint Cheese ball rolled in  cookies and candy with graham crackers for dipping.  The recipe is Sugar n Spice Gals.
Pies are always a yummy and pretty Christmas dessert. I love a good pecan pie. But my favorite is cheesecake. 

I love a good pie bar. You can add several kinds of squirt whip cream and ice creams and lots of pie servers. There are so many varieties that you can even buy at the store (Marie Callendars pies are good from the frozen food section, especially banana cream and coconut cream and razzleberry) and then make a few homemade. Everyone will think you made them all.

My sister-in-law makes this yummy crunchy munch. Her recipe for this yummy sweet stuff is  Cranberry Almond Chex Mix. It is really yummy, chewy and nutty. Everybody loved it! Check it out HERE at their blog.

 Now I just HAD to include some pictures of our grandkids and cousins playing the parts of the Nativity. Here are Marisa and Meg doing the shepherds. Aren’t they super cute holding little stuffed animal lambs?

And all the cousins playing the cast of characters. Thanks Aunt Danielle and Uncle Dennis for always putting this together. And Aunt Robin helping too with all the singing and music and costumes. It is such a wonderful night.

Pomegranate Almond Green Salad

Martha Stewart had a good looking recipe I thought I would try to go with our Lasagne for Sunday dinner today. Here is Martha Stewart’s recipe. I wanted to doctor it up a little bit.

Pomegranate Almond Green Salad with Raspberry Vinaigrette  

. It would be nice with a crumbly cheese too as an option. Or you could add grilled chicken pieces to it!!

 I sliced up some red onion, mango and threw some slivered almonds and the Pomegranates into a bed of greens for the Pomegranate Almond Salad. Then I drizzled a little bit of Kraft low calorie Raspberry Vinaigrette on top.

POMEGRANATE ALMOND GREEN SALAD 
2 to 3 cups Salad Greens
1/4 cup Cut up mango 
1/4 cup slivered almonds
`1/4 of a pomegranate (just take seeds out and drop them on top of salad)
slices of red onion (optional) 
Red Raspberry Vinaigrette 

It was yummy.  It went very good with our Lasagne dinner. It would be great for a Christmas party too.

It would also be good with cut up pears or strawberries in place of the mango. And it would be great for a pretty holiday salad!

Cranberry Salsa on Cream Cheese Dip

I went to a Christmas Progressive  Dinner Party the tonight and I tried the most delicious dip! It was with fresh cranberries and cilantro with a little jalapeno, lemon juice, sugar and cumin. It sounded so easy. I hung out by this dip the ENTIRE night!  It is embarrasing when I find something I love I just can’t stop eating it!  That’s my downfall! FOOD!  go figure…..

Oh YUMMY is this stuff heavenly!  I could stand here and eat it all day!  I really like it with Wheat Thins because chips fall apart when you try to push them

into the cream cheese….it may be better with soft whipped cream cheese…but it wouldn’t look as pretty on the plate…..

Cranberry Salsa Dip with Cream Cheese

INGREDIENTS:
12 ounces or about 3 cups fresh cranberries chopped in blender or chopper
1/4 cup chopped fresh cilantro leaves, finely chopped
1 small jalapeno pepper, seeded, cored,  and finely diced (cut it in half if you don’t like some HEAT)
3/4 cup sugar (you can add a whole cup but it is very syrupy and sweet…I’d knock it down to 3/4 cup)
1/2 teaspoon cumin
2 tablespoons fresh lemon juice (from about 1 large lemon)
1/8 teaspoon salt
2 (8 ounces each) packages cream cheese, light or regular, softened
Wheat Thin Crackers, for serving or Tortilla Chips
Chop about 3/4 cup at a time in your blender on “pulse”…or use a food processor for speed….
You can freeze fresh cranberries in the bag to use all year…did you know that?  Yeah,
the cranberry salsa keeps in the freezer too….so I put half of it away in a tupperware for another party!  
It looks like a lot of cilantro when you are done…so you could go less on it if you wanted….
The sugar is really sweet….It would taste okay to use less if you are watching sugar intake….

My hubs bought the jalapeno and it was large so I only used about half of it
and saved the other half for chili I made the next day….if you don’t like the heat use  1/3 of a jalapeno instead of 1/2. 

I didn’t have a lemon so I used lime juice….It was okay but I think lemon tastes better…
but lime will do in a pinch for sure! 

DIRECTIONS:
Pick over the cranberries looking for smashed or bruised ones. Then use your blender for the cranberries or a  food processor and  finely chop about 3/4 of a cup at a time.  Put into a bowl and add the sugar. Then chop the cilantro, jalapeno and add them in and mix up. Then add cumin, lemon juice and salt and mix. Transfer the mixture to a covered bowl or tupperware and refrigerate for 2 hours so cranberries lose  their tartness.

When you are ready to serve, put the block of cream cheese on a really pretty plate.  Top with the cranberry mixture.  Surround the plate with wheat thins crackers.  So very Yummy! 
I wonder if it would be good on a fresh turkey sandwich…hmmm….I’ve got a
turkey in the freezer too…I think I’ll have to experiment on that!! 

  It’s a great Christmas or New Year’s dip not only because it is red and green, but it always tastes fresh and tart and sweet for a fun party or for anytime! It is also great as a relish on turkey sandwiches! 

Holiday Breakfast Burritos

A fun breakfast for the holidays is Sausage Breakfast Burritos. 

It is easy to shred and chop lots of fillings and lay them out in colorful bowls for your guests to just  make their own burrito the way they like it!

1/2 of a Jimmy Dean sausage 1 pound chub…..we had leftovers so I froze it in a freezer bag.

I use fried up and crumbled Jimmy Dean sausage and scrambled eggs with red peppers, some cheddar cheese, tomatoes, and top with salsa or sour cream.

Warm up the tortillas in the microwave and cut up some fruits for side dishes.  Then pour some orange juice and dig in!

Gingerbread cake, Cookies and Christmas Cupcakes

On Thanksgiving we made some gingerbread cookies. You can see my son Dev wanted his gingerbread girl “anatomically correct”. lol 
Sadly, his gingerbread cookie’s anatomy melted flat in the oven. So sad……
You can see the box that I purchased to make these little houses. The gingerbread was a boxed mix from Costco that came with 4 pouches. One pouch said it would make 12 cookies and we had about 18 cookies. They were chewy and delicious! 
But this gingerbread brownie is one thing that is absolutely wonderful and delicious…..
Not quite as cute as the gingerbread houses and cookies turned out…but much more tasty! 
We made the boxed gingerbread houses from the kit with 4 little houses inside. Each of my granddaughters got one to make…..
It’s a really fun and creative activity to do for a Christmas party or family dinner in December….everybody got into it! 

I loved the ideas I read on Crystal and Company’s website. She makes cupcakes toppers out of candy. Her link is HERE for cute pirate cupcakes tutorial. I do a pirate party every year so I am copying her idea for sure.

There are so many cute things to put on top using candy, toothpick toppers, sprinkles, designing an animal face with candy, and making stripes and polka dot designs with candy and edible things.

Cute Reindeer Cupcakes for Christmas Day!

The Amateur Gourmet has a tutorial on making these cute reindeer cupcakes with curly pretzels and M &Ms. I think kids could totally do these and have a great time at a winter party. All you need is chocolate cupcakes and frosting and vanilla wafers and some little candies.  The rest is so easy!  Katy’s tutorial is HERE at Amateur Gourmet.

Tips for Melting Candy Wafers for Decorating Cupcakes……

1.Use a double boiler.
2. Use low heat.
3. Don’t boil it too fast or it turns to a ball.
4. Stir pretty regularly.
5. If you use a piping bag, let the melted candy cool for 10 minutes so it doesn’t burn your hands as you pipe
6. Once molds are filled put them in the fridge to harden, or between color layers.

Cream of Broccoli Soup like Kneaders

Cream of Broccoli cheesy soup like Kneaders …well except I added bacon (meat candy) 😀 

We have a fun little bakery/ sandwich shop in the Salt Lake City area called Kneaders. They make the most delicious artisan breads, soups and rich desserts, not to mention their hand pulled turkey and avocado sandwiches on focaccia bread.

 I dream about those sandwiches sometimes. And their cupcakes, cheesecakes and cream puffs are divine. Just look at their yummy selections! My daughter spoiled me on my birthday with a 4 pack of cupcakes in 4 flavors. It was such a yummy treat!

Kneaders is one of my favorite lunch spots in the Salt Lake valley. 

Anyway we had lunch there the other day and I had a combination soup and sandwich plate that included a yummy cream of broccoli soup. I think it is my hub’s favorite soup. He loved it so much I went home that night and tried recreating it. I think it is pretty darn close! We both loved it.

Here is my recipe for Broccoli Cheese Soup

2 cups of frozen broccoli florets
1/2 pint cream 
1/2 cube butter (use it to fry up onions with some olive oil)
1/2 medium onion (or more) diced
2 stalks celery finely diced
2 cups milk 
A cup or so of water added (I just add till I like the consistency)
2-3 tablespoons flour
1/2 to 3/4 cup mashed potato flakes to thicken
1/2 cup finely grated cheese of your choice
3 bacon pieces microwaved and crumbled crispy
1/2 teaspoon lemon pepper
1/2 teaspoon Johnny’s Season Salt
1/4 teaspoon garlic salt
pepper to taste

Broccoli Cheese soup on a cold, snowy day is the very BEST treat! 

I start all my soups by dicing the onion up in a fry pan with a little olive oil mixed with some butter. Then when they are caramelized I add the flour and a little milk to make a roux or a flour gravy. Keep adding milk a bit at a time till you have a thin white sauce. Then I add the diced celery, the broccoli florets, and milk.

Just steam your broccoli for 3 minutes in the microwave covered with plastic wrap. 

 After letting that all simmer for 5 to 7 minutes I add some water and potato flakes to get my perfect consistency that I prefer. Then I add seasonings, tasting as I go. I crumbled up 3 pieces of microwaved bacon into the soup when serving.  Cheese is added last. I think I used a mixture of grated jack and cheddar in one of those 1 cup bags you buy at Walmart…so convenient!

I learned how to make easy 30 minute french baguettes bread from the FOOD NANNY! 
The French Baguettes recipe and tutorial are on another WEEKDAY CHEF post. They are so easy you won’t believe it. And they are hot and crusty and yummy and No FAT! well…..except all that butter I slathered on after they were hot from the oven!! 

French Baguettes go great with hot, creamy Cream of Broccoli  soup! 

Anyway, it took all of 20 minutes to make this soup. I did microwave the broccoli in a little bowl with a bit of water and some plastic wrap over it for 3 minutes first so it was semi steamed before I dumped it in the pan.

Here is my finished broccoli cheese soup like Kneaders.  I added a few slices of crispy bacon crumbled up and some croutons…

I served the soup with some homemade garlic croutons (just buttered bread sprinkled with Johnny’s garlic seasoning and cut up then toasted in the oven) and some mozzerella cheese grated over top for fun. It was delicious!

 Hot, creamy soup is always a winter winner. Try it in a bread bowl. Jamie Cooks it up has a great recipe for breadbowls  HERE that always turn out pretty and yummy.

Here they are hot out of the oven made by my daughter Tiffany for my birthday dinner. She’s a good cook too! 

Creamy Broccoli Cheese Soup is perfect for a freezing, snowy day to curl up in a big quilt by the fire and sip while watching all the junk on my DVR! And even better in a bread bowl or with some hot french bread. mmmm…..yeah, I want some now!

Halloween Cupcakes and Brownies

I played around with some Halloween Cupcakes for a work party. 
I had about 7 different designs on my Halloween Cupcake treats. 

        It was fun to make the “Purple People Eater” cupcakes with little eyeball superballs.

 My favorite Halloween treats were these brownie skeletons made from white chocolate disks for the heads and yogurt covered pretzels for the bodies. I had to put chocolate icing on the walnut brownies too.I added pretzels and white chocolate candy melts for the faces. The rest of the body I used just white buttercream icing and made the legs and hands with a pastry bag and a decorator icing tip.

Here is a plate of my finished cupcakes. Love the chocolate vampire cupcakes with M & M eyes and candy corn teeth. The bloody smiles are made from red fruit snacks cut into strips.

I had some spider rings at school I added to the spiderweb cupcakes but forgot to take pics afterwards. The mummy cupcake was super easy with M & M eyes

 I added a small box of vanilla pudding, 3/4 cup of sour cream and some butterscotch chips to the batter of the cupcakes. I also added half melted butter, instead of 1/2 the oil. It just tastes better. I hate cupcakes where I can taste the oil! Yuck!

 Finished Halloween cupcakes and treats on top. They were very colorful and very yummy too.

 The easiest Halloween cupcakes were the spiderwebs and pumpkins. Just chocolate chips for the jack-o-lantern faces. I  just added chocolate chips for the face and some pretty sprinkles over the orange and green icing.

This vampire cupcake was so cute. I thought it turned out cute with the brown sprinkles for the chocolate iced hair, and the M & M eyes. I made some eyes brown chocolate chip eyes  too. I couldn’t decide which one looked better.

Notice the 2 colors of spiderweb cupcakes too. I think they both look really pretty. It would be a cute plate to just have the 2 flavors of spiderweb cupcakes for a party.

 I also made a pan of brownies too. They were skeleton brownies. I added candy corn to the square brownies.

 Check out all the sweet treat fun! I got a lot of inspiration from looking on Pinterest at cute treat ideas I could try. I love peanut butter cookies. I’d do the pumpkin kisses with peanut butter cookies instead of brownies.

These Halloween Brownies are super cute. And they were super easy.  I love a mint flavoring for the icing and then I would tint the icing mint green. It looks so fun  like cute little Frankenstein and jack-o-lantern faces!

Here at Tidymom.net is a bunch of really sweet cookies to decorate for Halloween. I love the Spiderwebs and Candy corn the best! But it is the assortment that really makes the white serving plate look special!

Easy Cheesy Breadsticks

Cheesy Breadsticks with Parmesan and garlic. mmmmm…….Make some to go with your favorite Italian dish! 

Easy Cheesy Breadsticks

1 1/2 C warm water
2 T sugar
1 T yeast
1/2 t salt
3 1/2- 4 C flour
1/4 Cup butter

1/4 Cup fresh Parmesan cheese

a few shakes Johnny’s Seasoning Salt 

 This recipe will make about 20-24  seven-inch breadsticks. 


1. Mix the water, sugar and yeast together in a measuring cup or in the bottom of your mixer. Let it sit for 5 minutes.


2. Add the salt and the flour a little at a time till mixed.  Beat for 5 minutes with Mixmaster dough hook. Let the dough rest for 5 minutes.

3. Place on greased cookie sheets in 6 inch rolls or use a pizza cutter to cut them into strips.  Use silicone brush to lightly brush melted butter on top of each bread stick.  

I poured melted butter and then fresh Parmesan and  a few shakes of Johnny’s seasoning salt. 

 I just use a pizza cutter and do strips of breadsticks. I don’t really care that they are lopsided or whatever. I was just doing them for the hubs and I so who cares. For company I’d make them the same lengths and thickness so they would look uniform.

You could also use just Garlic Salt instead or just leave it at Parmesan cheese and butter. 


4.Lightly sprinkle Johnny’s Season salt and parmesan cheese on each bread stick.   Let rise for 30 minutes. Bake at 375 for  10 – 12 minutes. When they are golden take them out. Yum. You will LOVE THEM!
